Simply Granola


 This is one of my family's favorite breakfast treats. We have it at least once a week over home yogurt(recipe coming soon) and fruit. We use in season fresh fruit, frozen fresh fruit, or organic frozen fruit from Trader Joe's. Eat it by the handful for a snack and energy boost, or just eat it plain with some fresh raw milk.  This recipe tastes so much better than the boxed stuff and it is loaded with nutrients. Did you know that fresh oats contain a ton of good fiber that lower cholesterol and promote heart health. Also, oats help control blood sugars, help fight off cancer, lower blood pressure, keep you regular, and they fill you up! In other words, you feel full longer which helps in weight loss! Talk about some good benefits, right? All of these ingredients have amazing health benefits, research a little yourself and you will see!


Simply Granola 



6 cups organic cooking oats
3/4 or 1 cup fresh unsweetened coconut flakes
1/2 sliced raw almonds(roasted strips the nutrients!)
4 tbsp organic flax seed
1/4 organic coconut oil(be sure to research why coconut oil is so beneficial for so many things!)
3/4 organic pure maple syrup 
a pinch or two of pure sea salt


Mix it all together is a BIG bowl. Preheat oven to 300 degrees. Put the slightly wet mixture on some cookie trays. I fill up two large trays that are about 1/2" filled with the granola. Cook for 10 minutes, stir and then another 10. I will check back after 5 minutes, just to make sure that the granola isn't burning. After it is done, I let it cool on a wire rack and then transfer to a glass jar with lid. Storing it in a glass jar will keep it fresh longer, but anything that is air tight will work. This recipes makes 1/2 gallon of delicious granola!!

Simply, I am back.

I can not begin to describe the joy that is brimming up within me as I re-begin this journey with all of you. It has been almost a year since my last post, and so much has happened with our family, our life, our journey. We have have learned so much, I am a little overwhelmed on where to begin. So, to make this "simple", I will let you know where life has carried us over the past year.
First and most exciting, we welcomed our newest Gamble in January. Turner Benjamin is our fifth, yes you read that correctly, our fifth blessing! He is truly beautiful. On with life...Rewind about 10 months, my husband received a call that would take our family on a radical journey. Due to sensitive information, all I can say is that our ministry was called to aid another ministry that was desperately needing our help. With the circumstances being what they were, we knew that we had no option but to say "YES". It is what we do, it is what my husband was created to do. So we sold/gave away almost half of what we owned(including all of our livestock), put the remaining essentials into storage and left our beloved farm/homestead. Within 3 weeks of receiving that call, our family of  7(We just found out 3 days before leaving, I was pregnant with Turner) and we were driving across the country with nothing but our suitcases, our dog and faith that we were doing the absolute right thing. It was hard. There was aches, pains, tears and uncertainty. But the one thing that we have learned as a family is to chase peace. We were chasing peace, even though in the world's eyes, we were crazy :)
Long story short. It wasn't quite what we expected. I am laughing out loud here. My husband did what he does and within 3 weeks of moving our entire family, he fixed the problem. We are now back home. Living in a new place, with new life, new animals, new hopes, and a precious new baby. So, that is all of our quite vague catch up story. Let's begin afresh with a lot of great recipes, tips, and journey together down this road to becoming the best we can be. If you are new to this blog, WELCOME! I will post as much as a Mama with 5 children, a farm, a huge garden, sheep, lambs, chickens, chicks, barn cats, a dog and a ministry can. I love that I have the of privilege of sharing what I learn daily, moment by moment. It is not perfect by any stretch of the imagination, but I try with excellence to live life with intention. To create a new path for my family that is good. I am honored to share these treasures with you, that you too may be able to live...simply.
